Breakfasts are usually very simple at our house, mostly because I am not a morning person and it is definitely not the first thing on my daily agenda to get up early to prepare an elaborate meal for everybody. I often feel like I am sleepwalking preparing school lunches. But I still think that it is important to get a healthy start in the day, especially for my kids.
Here is one of my very favorite breakfasts. It is a homemade Chai-scented granola sprinkled on top of some Kefir with organic fruit. Since I love the spice combination of a well prepared Chai tea this granola delivers it all in one bite. Crunchy honey sweetness blends perfectly together with some of my favorite spices cinnamon, ginger, cloves and nutmeg.
This homemade Chai-scented granola became a favorite in my house in an instant. It beats any store bought granola by miles. Don’t miss out and bake some today!
Ingredients:
* 4 cups old-fashioned oats
* 1 cup sliced almonds
* 1/2 cup (packed) golden brown sugar
* 1/4 teaspoon salt
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground cardamom
* 1/2 ground cloves
* 1/2 teaspoon ground ginger
* 1/4 teaspoon ground nutmeg
* 1/8 teaspoon ground pepper
* 1/3 cup vegetable oil
* 1/4 cup honey
* 2 tablespoons sugar
* 2 teaspoons vanilla extract
Directions:
Preheat oven to 300 F. Line a baking sheet with silicon pad.
Mix first 10 ingredients in large bowl (oats-pepper). Combine oil, honey, and sugar in small saucepan; bring to simmer over medium heat. Remove from heat; stir in vanilla. Pour hot liquid over oat mixture; stir well. Using a rubber spatula, toss mixture until thoroughly mixed.
Spread the granola on the lined baking sheet. Bake until golden brown, stirring occasionally (every 10 minutes), about 30 minutes. Transfer sheet to rack; cool granola completely. (Can be made 2 weeks ahead. Store in airtight container at room temperature.)
I serve my granola with plain Greek yogurt or goat milk Kefir and add some fresh or frozen organic fruit.

This was a great recipe! I only tweaked it a little bit by doubling the cardamom to bring out more of the chai flavor and scent 🙂

I tried making a granola very close to this last week but I forgot about it being in the oven and ended up with the worlds most expensive bird food! (I also added lots of seeds and nuts I bought from the organic market …lucky birds)
I'll try this one next time it looks great plus since my sons allergic to most nuts he will be ok with this since its just almonds.

Believe it or not, I've never had kefir! I agree that homemade granola runs circles around anything from a store. This looks like a lovely combination of spices!

This looks like a great recipe too. I can't use honey in our granola as I need to make them low-sugar. I do this by using applesauce. I'm gonna try to tweak my recipe so it resemble yours above. Thank you SO MUCH for sharing 🙂
