Humble ingredients shine in this heartwarming chicken noodle soup. This simple combination of carrots, celery, chicken, noodles and broth never seems to disappoint.

This chicken soup will be on your dinner table in less than an hour. Smiling faces will await you, especially from your little ones. My kids love chicken noodle soup after a long school day in the winter.

Serves: 6-8
Ingredients
  • 7½ cups canned low-sodium chicken broth, preferably homemade stock
  • 2 bay leaf
  • 1½ onions, cut into thin slices
  • 3 ribs celery, cut into ½-inch pieces
  • 4 carrots, cut into ½-inch pieces
  • 1½ teaspoon dried sage
  • 2 teaspoons salt
  • ½ teaspoon fresh-ground black pepper
  • 4 organic chicken breast
  • about 4-5 cups cooked egg noodles (al dente)
  • 3 tablespoons butter, softened
  • 3 tablespoons flour
Instructions
  1. In a large pot, bring the broth, bay leaf, onion, celery, and carrots to a simmer. Simmer for 5 minutes.
  2. Add the sage, salt, pepper, and chicken breasts and simmer, partially covered, until just done, about 25 minutes.
  3. Turn the chicken breasts a few times during cooking. Remove the chicken breasts after they are done, cut in smaller cubes and return to the pot.
  4. In a small bowl, stir the butter and flour together to form a paste.
  5. Remove the bay leafs from the pot and whisk the butter mixture into the liquid. Simmer until thickened, 1 to 2 minutes.
  6. Stir in the cooked egg noodles and simmer until just heated through.

I made this last night. It was a hit. My 3 year old even ate some – well noodles – but they were flavorful! (he's the pickiest!) I loved how "nudely" it was.!! Thank you for sharing this!

@highplains: That is all I use. I buy the organic chicken one in a big jar at Costco. It is my favorite.

Have you tried Better Than Bouillon's stock paste? I passed it over for years, assuming that something so small couldn't taste good. But Bon Appetit gave it high marks. No cans, no can openers, no tin to chuck in the recycle bin every meal. And hate to rub this in, but about $3 for 9 quarts when i get it at the commissary. Cheers!

Hühnernudelsuppe ist wirklich das Beste, um gegen kaltes Winterwetter (und lästige Erkältungen…) anzukämpfen. Letzte Woche hab ich auch einen großen Topf davon gekocht. Liebe Grüße, die andere Kirsten ;o)

I would seriously love this at the moment. I've had a cold for the last 2 weeks, and my mother always says chicken soup is the best thing for it. It looks so delicious. Oh, and I love your red pot!
