Nutty Kahlua Chocolate Chip Cookies

It is really not my intention to spoil any of your new year’s resolutions, really not. I think we all try to eat a little healthier to get rid of a few pounds accumulated over the holidays. I know, my mirror knows and so does my scale. Personally, I don’t believe in depriving yourself of something completely. Everything works in moderation. Therefore cookies are also a part of a healthy diet if you don’t eat 10 cookies a day, right?

My nutty Kahlua chocolate chip cookies are baked with hazel- and walnuts. Both nuts contain omega 3 and omega 6 fatty acids. These are the good fats! The chocolate gives you the little bit of mood boost during your long work day.

My recommendation/ prescription :
Enjoy about two per day with a nice cup of tea or coffee. Eaten preferably mid afternoon.  Don’t skip doses. Finish the batch. For refills consult your favorite baker.

 

 

Makes about 40-50 cookies.

Ingredients:

* 1 cup butter (2 sticks), at room temperature (always unsalted for baking!)
* 3/4 cup sugar
* 3/4 cup dark brown sugar
* 2 eggs, at room temperature
* 2 teaspoons vanilla extract
* 3 tablespoons Kahlua
* 2 2/3 cup flour
* 1 teaspoon baking soda
* pinch of salt
* 1 1/2 cup chocolate chips
* 1 cup chopped nuts (I used walnuts and hazelnuts)

Directions:

Preheat Convection oven to 350 F. Line baking sheet with baking paper or silicon pad.

Mix the flour, baking soda and salt. Set aside.

In a kitchen machine cream the butter and sugars for about 4 minutes. Add the eggs, one at a time, mixing very well after each addition. Mix in the vanilla flavor and Kahlua. Stir in the flour mixture and mix until well integrated. Add the nuts and chocolate chips, mix well.

Drop the dough by flattened tablespoons on the lined baking sheet. Bake on center rack for about 9 to 10 minutes or until the edges of the cookies start turning brown.

 This cookie recipe is already adjusted to the altitude I live at, which is about 6500 feet (almost 2000 m).

I can't wait to make these this weekend! Isn't it tradition to have a drink of Kahlua with every batch while baking these cookies? If it's not, it will be come Saturday! Yummy! 🙂

I love Kahlua, and these cookies are awesome with the sweet coffee goodnes from the liquir and the nuts. so buttery perfect. I would love one right now…but who can stop at one cookie?…that means get my act together, and bake some. I always have Kahlua on hand!

I really appreciate the High Altitude baking tips. I think I've told you before that I pretty much stopped baking when I moved here. Disaster after disaster. I agree on the moderation approach.

I appreciate the prescription though I tend to overdose when given the opportunity Doctor; but am dying for some of these, right now!

I'm with you on the high altitude cookie business; but have found that it also helps to increase the oven temp a bit and decrease the cooking time; leavening expands quicker at altitude and that change seems to help keep the cookies from having a chance to both rise quicker and then fall.

I never used to worry about them falling…they've always tasted great but now that I'm blogging and see what other cookies look like…it's a mission of mine to find that perfect blend of ingredients and modifications to get that visually perfect result!

I'm having no luck with high altitude conversions. We're right at 5200, which must not be quite high enough, because usually the normal recipe works best.

Your picture reminded me of something I've been having trouble with: I just cannot bake a chocolate chip cookie where the chips stay hidden in the batter and don't pop through the top of the cookie. My greatgrandma always said that was the mark of a perfect chocolate chip cookie, and your pix look darn near perfect.

Thanks for the high altitude hints. Yes, since moving here I have several baking disasters on record. I am still trying to figure out how to make a good English Victoria sponge at 6,000 feet. I've temporarily given up but may give it another try sometime soon. I'll let you know if I finally have a success. Lovely recipe for the cookies. I may just try them instead.
