Celebrating My Blog’s 1st Anniversary with a German Marzipan Apple Cake

The end of  February marks my Blog’s first Birthday and I would like to invite all of you to stop by and take a piece of fresh-baked German Marzipan Apple Cake. Thanks to my family, friends and all of you wonderful followers from the bottom of my heart. I could not have done it without you.

“My Kitchen in the Rockies” has brought me lots of joy. Sharing my family’s favorite recipes started an unimaginable  journey. I have acquired new computer skills, improved my food photography and cooked up a storm of new dishes. I met Chef Rick Bayless and was contacted by David Lebovitz. Most important to me though, is meeting all of you, my food blogger friends. Special thanks to my local fellow bloggers Lea Ann, Carter, Susan, Andrea, and Karen. You rock girls!

Some important goals for the next year are:

*  Cook more tasty vegetarian dishes
*  Share German recipes from my home region
*  Support our local farmers as much as possible
*  Stick with my commitment not to purchase any products from animal mass farming
*  Purchase even more organic ingredients
*  Move “My Kitchen in the Rockies” to a WordPress hosted site
*  Improve my writing and photography skills (this will be the hardest)

I am looking forward to another exciting year full of new adventures.

German Marzipan Apple Cake is one of my newer finds. The cake has marzipan in the dough which provides an incredible almond flavor. Marzipan is a confection consisting of sugar and almond meal. It is very common in German baking and can be found at any well stocked supermarket. I purchase mine at World Market (or IKEA). It also tastes pretty darn good all by itself. Combined with the apples it makes for a very delectable cake. Don’t miss out on this one!

Ingredients:

*  3 (500 g) organic apples
*  3 tablespoons lemon juice, freshly squeezed

*  1/3 cup + 1/2 tablespoon (100 g) Marzipan (almond paste), more info here
*  9 tablespoons (125 g) butter, at room temperature
*  1/2 cup + 2 tablespoons (125 g) sugar
*  1 teaspoon pure vanilla extract
*  1/4 teaspoon almond extract
*  3 eggs, at room temperature
*  1 1/4 cups (150 g) organic flour
*  1 teaspoon baking powder
*  1/4 teaspoon salt
*  1/8 teaspoon cinnamon

topping:
*  1 tablespoon sugar
*  1 teaspoon cinnamon
mix the two ingredients

Directions:

Preheat the oven to Convection 350 F. Grease a 26 cm spring pan with butter.

Peel the apples and cut each of them in 8 equal slices, sprinkle with lemon juice and set aside (should be about 5 1/2 cups).

Grate the marzipan.

Mix flour, salt, cinnamon and baking powder. Set aside.

Cream butter, marzipan and sugar in a kitchen machine. Add the eggs, one egg at a time mixing well after each addition. Stir in almond and vanilla extract. Turn the mixer to slow and stir in the flour mixture. Don’t over mix!

Pour dough into the spring pan and flatten. Distribute prepared apple slices evenly on top and sprinkle with the cinnamon sugar mixture.

Bake for about 35 minutes, or until a toothpick inserted in the center comes out clean. Cool.

My daughter made this apple cake for my Mother’s Day brunch today, and everyone at the table commented about how absolutely delicious it is. A wonderful recipe for brunch or even dessert. Thank you.

Thanks for reading my blog and enjoying my German recipes.
As for printing the recipes, a lot are written in the easy recipe format, which allows you to directly print them (just hit print in the right hand corner of the recipe) including a picture. Older recipes are easy to copy, so just highlight
the recipe part, copy it and paste it into word or just a blank window and print. Hope that helped.

Today is a great day for a marzipan apple cake – woke up to snow on the ground when I looked out the window waiting for my single cup coffee maker to brew my morning coffee.

It was in the 60s last week, and now winter is back! Yuck!
