Pomegranate Vinaigrette on Roasted Asparagus

Fresh green asparagus is one of my most favorite spring time vegetables, preferably roasted, since it gives an extra flavor boost to the asparagus.

Here I am serving the roasted asparagus with vinaigrette made out of pomegranate molasses, aged balsamic vinegar and a good organic olive oil. A healthy and quick side dish that goes impeccably well with grilled chicken or steak.

Serves 4 to 6.

Ingredients:

* 1 tablespoon pomegranate molasses*
* 1 tablespoon aged balsamic vinegar
* 1/2 teaspoon ground black pepper, plus more to taste
* 1/2 teaspoon salt, plus more to taste
* 3 tablespoons organic olive oil

* 2.25 pounds green asparagus
* olive oil
* pepper and salt

Directions:

Preheat oven to 400 F Convection.

Place washed and trimmed asparagus on baking sheet. Sprinkle with oil and seson with pepper and salt. Roast for 12 minutes.

Place all the vinaigrette ingredients in a clean marmalade glass. Tighten the lid and shake until mixed well.

Place asparagus on serving platter and drizzle with vinaigrette.

I love the presentation! I just may have to try that the next time we have friends for dinner. Asparagus is a favorite in our house – most often grilled with portabello mushrooms and red onion with balsamic vinegar, olive oil, garlic and fresh ground pepper. Yum!

Fantastic photos. I also prefer my asparagus roasted. I could eat that whole bundle by myself. Now, I'm adding pomegranate molasses to the shopping list.

Oh my goodness! I love asparagus. Since I'm predictable, I almost always serve it with a lemon sauce. But a pomegranate sauce sounds unique and delicious! Thanks for the inspiration to step outside of my box. Love the pictures!

Fabulous pics. Thanks for the tip…I never thought of using pomegranate molasses in vinaigrette. I am always on the look out for a simple way to use the bottle I bought.

Gorgeous! I just happen to have some pomegranate molasses, sounds like this might be dinner tonight! For those of your readers who have had trouble finding pomegranate molasses, it is usually quite readily available at Indian grocery stores. It does add such a unique flavor!

I have yet to find pomegranate molasses in a local store but you've inspired me to keep looking. I could eat asparagus every day during the season and am always looking for a new garnish. Yum.

I have some pomegranate molasses that I bought because it seemed I saw a bunch of uses for it…til I bought it. I love asparagus so much and that means I'm always looking for a different method for preparation.This sounds perfect and now I'm excited I have the goods on hand!
