German Kohlrabi-Apple-Radish Salad

Every Saturday morning after breakfast it is time for me to shop for my weekly produce at my local farmers market. The market isn’t very big, but I like the vendors and the produce they sell since it is all Colorado grown.

One of my preferred stops at the market is the Martindale Farm’s stand from Platteville, CO. They sell Colorado grown produce such as cabbage, radishes, onions, potatoes, lettuce, tomatoes, corn, cilantro, parsley, mint and kohlrabi. I was pleasantly surprised when I saw kohlrabi, a German cabbage variety for sale, and had to buy it right away. It was a kitchen staple at my mom’s house growing up.

Kohlrabi translates into cabbage turnip. It can be served cooked or raw, and has a much milder taste than your traditional cabbage.

Here I prepared the kohlrabi as a crunchy salad with apple and radishes. This summer salad is one of my daughter’s favorite. I gave it my own twist and added some sweet chili sauce. It lifts the taste of the salad to another level.

Try to find some kohlrabi at your local farmers market, and give this Kohlrabi-Apple-Radish Salad a try. I am sure you will also be preparing it over and over again.

Ingredients:

*  2 Kohlrabi, cleaned and peeled
*  1 apple
*  2 Tablespoons ( 30 ml) lemon juice
*  1 bundle radishes
*  1/2 teaspoon sugar
*  6 Tablespoons whipping cream
*  2 Tablespoons mint leaves, chopped
*  salt and white pepper
*  sweet chili sauce ( Kirsten’s addition)

Directions:

Using a mandoline ( this is mine and I love it!), slice the kohlrabi and the quartered apple into thin strips. Immediately mix the apple slices with the lemon juice to stop them from turning brown. Cut the radishes into smaller slices.

In a bowl, mix apples, radishes, kohlrabi, fresh mint, whipping cream and sugar. Season with salt and pepper. I omitted the sugar and added some sweet chili sauce.

Kohlrabi hab' ich im Garten, nur die Radierl fehlen mir. Gute Idee – Kohlrabi im Salat.

You just took me back to when I lived in Germany. I'm going to try out this recipe. I just found your blog and will be looking through your recipes. Once I get settled (I'm in the process of moving), one of my first recipes will be Zwiebelkuchen, as well as some Mexican food.

I have 3 small kohlrabi in the fridge from my farm – I don't love them, but this recipe with the apples and radishes looks like it just might entice me to use them before they rot!

I could tell right away this was a German recipe by the whipping cream dressing. My mother was of German/Dutch/Irish heritage and I loved her potato salad, spaetzel, and apple cake most of all. This recipe will be at the top of my list to try for our summer meal. XOXO
