Dark Chocolate Chili Truffles and a Visit to Ouray Colorado

On our recent two week RV trip we spent the last couple of days in southern Colorado. One of the stops was Ouray , where, in search for coffee and some treats, we happened to stumble over a little gem, Mouse’s Chocolate & Coffee shop. It was actually my daughter who spotted the sign first, since her nickname has been Mausi (which means little mouse in German) forever.

Once inside,  it is very hard to choose from the big variety off their homemade sweets like chocolates, truffles, Belgian chocolate Fudge, fresh baked goods, coffee drinks, shakes and ice cream. Look at this huge rack filled with truffles. I wish they would have let me roll it out the front door with me.


Well, my waist line says thank you, and luckily I wasn’t able to do that, but we indulged in several of their handmade truffles. Mr. Rockies’ favorites were the dark chocolate chili truffles.

Dark Chocolate Chili Truffles

Ingredients
  • 17.64 ounces (500g) dark chocolate
  • 1.69 fluid ounces (80ml) cream
  • 1 teaspoon chilli powder or to taste
  • 1.41 ounces (40g) butter, unsalted
Instructions
  1. In a smaller pot bring the cream and chilli powder to the boil. Add ⅔ of the chocolate and melt while stirring to a smooth mixture. Add butter and stir again.
  2. Pour the mixture into a buttered rectangular baking dish; leave to set completely (about 6 hours).
  3. Remove the set chocolate from the dish and cut smaller squares. Roll them gently between the palms of your hands for round truffles.
  4. Melt the remaining dark chocolate and leave to cool again. Coat the rolled chocolates with the melted chocolate and let set.

 


While visiting Ouray we drove our Jeep across Imogene Passinto Telluride. This was an unforgettable trip. The scenery is just indescribable. This picture is taken almost on top of the pass, which is 13,114 feet (3997.15 meters) high looking towards Ouray.

I want to make those truffles ASAP. The SW part of our state is fabulous. I’ve not been to Telluride, but close. And yes, I love that scale. Thanks for taking the time to post the photos of your trip.

What a fantastic find and beautiful trip Kirsten. That area is by far my favorite in Colorado. We’ve stayed in Telluride a few times and passed through Ouray. My husband used to ice climb there too. You always make truffles look so gourmet and take the angst out of the idea of making them. Hope you are enjoying your summer! The photos, as always, are gorgeous and really offer a great ‘ride along’ for we readers; thank you!

First, the chocolate truffles look amazing and I love pairing chocolate with a kick! However, the photos you took of your trip are breathtaking, especially the flowers. Our daughter attended Colorado State University and we’ve seen some beautiful scenery, but I’ve never seen this part and am anxious now to take a trip. Thank you for sharing…everything! XOXO
