Brown Sugar Cookies with Ginger

There are lots of great cookie recipes out there, but some stand out from the crowd. These brown sugar cookies with ginger are one of the best with their crunchy outside and the chewy center. The little taste of cinnamon and ginger is just right, not too overwhelming. They were baked by my daughter this week, while she had a day off from school.

Brown Sugar Cookies with Ginger

Ingredients
  • 1½ sticks (6 ounces, 170 g) unsalted organic butter, at room temperature
  • 1¼ cups (250 g) dark brown sugar
  • 1 large egg, at room temperature
  • 2 cups (240 g) organic all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon kosher salt
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
Instructions
  1. Preheat your oven to 375 F (190 C).
  2. Line two baking sheets with silicon pads or parchment paper. Set aside.
  3. In a stand mixer with paddle attachment mix together butter and brown sugar, about 6 minutes.
  4. Add the egg and mix well.
  5. In a separate bowl sift together flour, baking soda, salt, ginger and cinnamon.
  6. Slowly add flour mixture to the butter mixture until just combined.
  7. Distribute tablespoon sized dough drops onto the baking sheets, about 2 inches apart..
  8. Bake for 8-12 minutes.
  9. Let cool on wire rack for a chewier cookie or on the baking sheet for a crunchier version.

Brown sugar cookies reminds me of Christmas. I love sugar cookies, but brown sugar cookies are even better, especially with the addition of ginger. I would cut the sugar down to 1 cup for us…otherwise it’s perfect and yummy in every way:)

For whatever reason, I haven’t been keeping up with my reading of a lot of blogs for a while (too busy/too many other commitments/you know – just too much other ‘stuff’). So, I was looking back at some of your earlier posts and found your wonderful post about becoming a US citizen.
I want to wish you the biggest Congratulaltions to you! And it is truly special that you are able to keep your German citizenship also. I think many of us born in this country take our citizenship for granted and forget how lucky we are. Thank you for reminding us.

My grandma made brown sugar cookies, but I always found them too sweet. I wonder if the spices cut through that a bit?… hmmm…. Thanks for sharing!

Laura, I personally didn’t find this recipe turning out way too sweet. Since my daughter did bake them I wasn’t involved in the decision on how much sugar to add. I usually cut 25% of the sugar amount. Hope that helped. Happy Baking!

The perfect cookie! I wish I had one right now with my morning Diet Coke:-D Besides the fruits of the season, ginger is definitely one of the spices I associate with fall; must be the warm feeling you get eating something that contains it. I’m anxious to whip these up and will take some to Ohio when I visit my grandson at the end of the October…he’ll love them too! XOXO
