Mango Breakfast Smoothie This morning after walking my dogs I felt like eating something fresh and a mango breakfast smoothie sounded just right. It is still summer weather here in Colorado and it warms up very quickly in the mornings. I try to leave  early with my two boys, but even by 8.00 am the heat has already caught up with us. I had a ripe mango that needed to go and lots of coconut water that my daughter talked me into buying, but now decided she doesn’t like anymore. These kind of purchases happen sometimes when I take my kids shopping with me. To you, too? So, I blended the mango,  coconut water, some fresh lemon juice and ice cubes. You could also add bananas or strawberries. This mango breakfast smoothie would also taste great prepared with milk, but would be a little heavier. To me it was the well needed refreshing and healthy pick me up after my long walk. I will definitely make this mango breakfast smoothie very soon again (especially since I have lots of coconut water left in my pantry).  I hope you enjoy it, too.

Ingredients
  • 1 ripe mango, chopped
  • 1 container (11.1 fl oz, 330 ml) coconut water
  • juice of ½ fresh lemon
  • 1 cup ice cubes
Instructions
  1. Place all the ingredients in a kitchen blender.
  2. Blend until all ingredients are well combined and smooth.

 

I also would like to share with you a picture of my dogs enjoying a nice summer evening on our deck. They are both older gentlemen. My chocolate lab is named Kajo. He came to us 10 1/2 years ago as a puppy. I can’t believe it has been that long ago. He actually picked me. Yes, here was this little puppy following me around. Well, he stole my heart on the spot. Kajo is the most well behaved dog you have ever met and such a sweetie. He is gentle and thoughtful. The yellow lab you see in the picture is our newest addition to the family. He was my Christmas wish and early Christmas gift last year. His name is Wyatt. He is a rescue dog and we think he is about 9 years old. Wyatt is one of the most adorable dogs ever. I fell in love with his picture on the rescue site. We are all so lucky he is part of our family now. He makes us laugh every single day.  I love both of my doggies to death. They are the best!

Ain’t no thing but a nice mango. Love it! One could turn that smoothie into a alcohol free cocktail by making it bigger and adding some vanilla ice cream. Do you think that would work out well?

Replace “daughter” with “husband” and my life of buying things that don’t get used is pretty much the same as yours 🙂
That being said this smoothie looks so refreshing and simple! Perfect for an early breakfast.

This smoothie looks so refreshing. I can’t tell you the number of things I have bought with my kids in tow at the store only to have them remain unused in my pantry. I am so glad you found a purpose for your latest kid purchase. I love the photo of your boys.
