Meyer Lemon Coffee Cake

It’s very rare that I see Meyer Lemons at my local Natural Grocers store. Yesterday I was lucky and in the cart they went. Back in my kitchen I decided on this Meyer lemon cream cheese coffee cake since I also wanted to use up some of the cream cheese that has been sitting in my fridge for a while. What a fantastic decision. This Meyer lemon cream cheese coffee cake is light, creamy, and crunchy in one single bite. I also like that it is not too overly sweet. My “non dessert” eating husband agreed and ate two pieces in one sitting. Well, that says it all.

In case you can’t find Meyer lemons, which are a little sweeter than your regular lemons, you could substitute regular lemons and add a little bit more sugar to the recipe. But hopefully you will be as lucky as I and get your hands on some fresh Meyer lemons to try this irresistible Meyer lemon cream cheese coffee cake. Enjoy!

Ingredients
  • Cream cheese filling:
  • 8 ounces (227 g) cream cheese, at room temperature
  • ¼ cup (50 g) sugar
  • 1 egg
  • 2 teaspoons (10 ml) fresh Meyer lemon juice
  • 1 teaspoon (5 ml) Meyer lemon zest
  • Cake:
  • 1½ cups (180 g) flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (120 ml) safflower oil (or other vegetable oil)
  • ¾ cup (150 g) sugar
  • 1 egg
  • ½ cup (125 g) Greek yogurt
  • zest of one Meyer lemon
  • 1 Tablespoon (15 ml) fresh Meyer lemon juice
  • Streusel topping:
  • ½ cup (60 g) flour
  • ¼ cup (50 g) sugar
  • ½ teaspoon Meyer lemon zest
  • 2 Tablespoons cold butter, pea size cubed
  • powdered sugar for dusting
Instructions
  1. Preheat your oven to 350 F convection.
  2. Butter an 8 x 8 inch baking dish and line with parchment paper. Make sure to have parchment paper hanging over the edges for easier removal of the cake later.
  3. Cream cheese filling:
  4. Using a smaller bowl and a hand held electrical mixer combine the cream cheese, sugar, egg, Meyer lemon juice , and zest until smooth. Set aside.
  5. Streusel topping:
  6. Using a smaller bowl and your hands combine the flour, sugar, zest, and butter until small crumbs form. Set aside (best in fridge!).
  7. Cake:
  8. Combine flour, baking powder, baking soda, and salt in a bowl. Set aside.
  9. Using a stand-mixer combine the oil and flour.
  10. Add the egg and mix well.
  11. Add the yogurt, lemon zest, and lemon juice until the mixture is creamy.
  12. On low speed add the flour until just combined. Don't over mix!
  13. Transfer the batter into the prepared baking dish.
  14. Spread the cream cheese mixture evenly on top of the cake batter.
  15. Evenly distribute the streusel on top of the cheese layer.
  16. Bake for 40 minutes. Baking time may vary.
  17. Let cool and remove from pan.
  18. Dust with confectioner sugar.
  19. Cut into 12 equally sized rectangles.
Notes
Please use organic and GMO free ingredients for this recipe.

Tip: Freeze leftover fruit zest and juice in two separate small Ziploc freezer bags for later use.
