The Perfect Cookie to take Skiing

If you haven’t made it up to the mountains this year you still have lots of time to go. The snow conditions are great and there is nothing better than spending a day on the slopes. Our whole family loves to ski and it is always so much fun to be outdoors enjoying the beauty of our Colorado Mountains.

After a few hours of skiing we usually need a little energy boost.  This is the perfect cookie to eat on the lift. My family has been devouring them. Oatmeal, coconut, almonds and peanut better chips make for an unbelievably flavorsome cookie. It won’t crumble nor stain your jacket pockets either!

You don’t have to hit the slopes to enjoy this impeccable cookie. Combine it with a hot chocolate, next to the fire place at your home.

Ingredients:

*  2 1/2 cups flour
*  2 teaspoon baking soda
*  1 cup (2 sticks) butter, softened
*  1 cup sugar
*  1 cup packed brown sugar
*  2 cups rolled oats
*  1 cup peanut butter chips
*  3/4 cup shredded coconut
*  1/2 cup sliced almonds
*  3 eggs, at room temperature
*  1 teaspoon vanilla extract

Directions:

Preheat oven to 350 F Convection.

Line baking sheet with silicon mat or baking paper.

Mix the flour, baking soda and salt and set aside.

In a kitchen machine mix the sugars with the butter for about 4 minutes. Add the eggs, one at a time, mixing very well after each addition. Mix in the vanilla extract. Add the flour mixture slowly to the dough until well integrated. Stir in the oats, coconut, peanut butter chips and almonds until evenly distributed.

Drop the dough by heaping teaspoonfuls onto the baking sheet. Bake for 8 to 10 minutes or until light brown. Cool the cookies on a wire rack. Store in airtight container.

First of all, I love the new blog design. Very classy. Secondly, I have lived in Colorado all but the first three years of my life and have never gove skiing. I know it is a travesty. But I should make these cookies and take them snowshoeing!

Great looking cookie :o) The flavors sound awesome. Guess I'll have to keep my eyes open for peanut butter chips, which I don't think I have seen anywhere here! Beautiful pictures too, Kirsten!

That cookie does sound wonderful. I needed those for an energy boost just driving around the slopes of town a few days ago. 🙂 As always, great photos Kirsten.
