Happy Valentine’s Day!
Take a few salted caramels and share them with your loved ones. You will definitely be their favorite Valentine.
The caramels are very easy to assemble. Next time I will use a little less cream, so the caramel will have a slightly firmer consistency. You can also firm them up in the fridge (this is what I did). The salted caramels are unbelievably tasty. Don’t miss out and put them on your “to do list” right away.
Ingredients:
* 1 cup heavy cream (use a little less)
* 5 tablespoons unsalted butter, cut into pieces
* 1 teaspoon fleur de sel ( I used Cyprus flake salt)
* 1 1/2 cups sugar
* 1/4 cup light corn syrup
* 1/4 cup water
Directions:
Line bottom and sides of an 8-inch square baking pan with parchment paper, then lightly oil parchment.
Bring cream, butter, and fleur de sel to a boil in a small saucepan, then remove from heat and set aside.
Boil sugar, corn syrup, and water in a 3- to 4-quart heavy saucepan, stirring until sugar is dissolved. Boil, without stirring but gently swirling pan, until mixture is a light golden caramel.
Carefully stir in cream mixture (mixture will bubble up) and simmer, stirring frequently, until caramel registers 248°F on thermometer, 10 to 15 minutes. Pour into baking pan and cool 2 hours. Cut into 1-inch pieces, then wrap each piece in a 4-inch square of wax paper, twisting 2 ends to close.

OMG! this look amazingly dangerous! I for one, never share my caramels… Dulce de Leche and caramels are my thing.

I'm so behind the times! I need to make salted caramels so I can feel like part of the club! They are always so delicious and don't look hard to make! Problem is, they don't look hard to eat, either! Ha!

Ever since I've tried salted dark chocolate from Lindt, I've been hooked on the combination of sweet and salty. Your caramels look wonderful and I'm not sure I could stop eating them if they were around. I think I would have to give most of them away as gifts to save my waistline ;o) Super Rezept!
